Homemade Protein Bars | No-Bake Protein Oat Bars

 

INGREDIENTS:

2 cups dry whole grain oatmeal

4 scoops of vanilla whey protein powder

1/2 cup peanut butter

1/3 cup water or milk

DIRECTIONS:

Mix all ingredients together in a bowl. Then line a pan with wax paper or spray with non-stick cooking spray and press into the pan. Smooth and make the layer even. Refrigerate for 30 to 45 minutes. Remove and cut into bars!

Salt and Pepper Zucchini Chips

INGREDIENTS:

1 lb (about 4 cups) thin sliced Zucchini*
¼ tsp salt
¼ tsp pepper
½ tsp olive oil (this can be omitted)
1 tsp apple cider vinegar

DIRECTIONS:

Slice the zucchini. A slicer is necessary or get the pieces super thin. Toss with salt, pepper, and olive oil. Then arrange slices on dehydrator trays. Dehydrate at 135 degrees for 5-6 hours.

Basil Lime Chicken

INGREDIENTS:

  • 3 Limes (juice and zest) Divided
  • 3 T Olive Oil
  • 1/4 Cup Extra Virgin Olive Oil
  • 3 T Dijon Mustard
  • 3 T Worcestershire Sauce
  • 3 T Soy Sauce
  • 6 Green Onions Chopped Divided
  • 4 Cloves Garlic Minced Divided
  • 2 T Chopped Basil
  • Salt and Pepper to taste
  • 3 lbs Chicken Breasts

 DIRECTIONS:

Combine the zest and juice of 2 limes, olive oil, mustard, worcestershire, soy sauce, 2 onions, 2 garlic clovers, salt and pepper. Mix well. Cut chicken and place in gallon sized baggies. Pour marinade over chicken and marinate for 1 hour. Cook the chicken on the grill and then let the meat rest. Combine lemon juice and zest, olive oil, 3 chopped onions, 2 minced garlic cloves, and basil. Slice chicken and top with this sauce.

Low Carb & Gluten Free Strawberry Cheesecake Popsicles

INGREDIENTS:

8 oz cream cheese, softened

1 cup cream

1/3 cup powdered Swerve Sweetener or sweetener

1/4 tsp stevia extract

1 tbsp lemon juice

2 tsp lemon zest

2 cups fresh strawberries, chopped, divided

 DIRECTIONS:

Place cream cheese in a food processor and process until smooth. Add cream, powdered erythritol, lemon juice, lemon zest and stevia extract. Process until smooth. Add 1 1/2 cups of the strawberries and process until almost fully smooth. Stir in remaining chopped strawberries. Pour mixture into popsicle molds and push popsicle sticks about 2/3 of the way into each Freeze for at least 4 hours.
