All That Glitters: Dinner Recipes!

Hey everyone! This week on All That Glitters I am posting three recipes for dinner and one dessert! This is what I will be making for dinner this week before the family heads to Orlando for Book Bash! Hope you enjoy.

Chicken and Rice Casserole



4 boneless skinless chicken breasts

2 boxes of uncle Ben’s rice

4 cups chicken stock

6 Tbs cornstarch

7 slices pepper jack cheese


Bake seasoned (salt pepper garlic) chicken breasts in 375 degree oven for 45 minutes. About 25 minutes in cook uncle Ben’s rice as directed. While that is cooking make the sauce. Stir chicken stock and cornstarch with a whisk on medium heat. Once it thickens cook just for a few minutes more. Take off the heat and add pepper jack cheese. Cut up your cooked chicken breasts. With a rubber spatula fold in chicken, rice, and sauce. Put in greased casserole dish. Bake at 350 for 40-50 minutes or until bubbly and the consistency you like.




Beef Stroganoff



2/3 cup milk

1 Tbs Worcestershire

2 cans of cream of chicken soups

1 cup sour cream

package egg noodles

package of hamburger


Cook hamburger meat and set aside. On medium heat, stir together soup, Worcestershire, milk,  and sour cream. Add in hamburger. Cook egg noodles are directed on package and top with the hamburger sauce.


Chicken with tomato sauce and roasted veggies



4 Boneless skinless Chicken Breasts

2 Cans of crushed tomatoes

1 Zucchini

1 pkg. Cherry Tomatoes

2 Peppers (red and yellow)

1 bunch of Asparagus

1 pkg. Mushrooms


Place veggies in a baking pan. Season to taste and then roast for 1 hour at 400 degrees. Stir occasionally. Set aside.

Place chicken breasts in a baking pan. Season to taste and pour the crushed tomatoes over the top. Cover with foil and cook about 30 minutes (or until chicken is cooked through) When chicken is cooked, toss the veggies in to coat with sauce and then serve.


Flourless Peanut Butter Oatmeal Chocolate Chip Cookies



2/3 cups of Rolled Oats (Gluten Free)

1 tsp baking soda

1 cup peanut butter

2/3 cup brown sugar

2 large eggs

1-1/2 tsp vanilla extract

2/3 cup chocolate chips


Pre heat oven to 350. Mix together oats and baking soda and set aside. In large bowl beat peanut butter, brown sugar, eggs, and vanilla with a mixer until smooth. Add in dry ingredients with wooden spoon then fold in chocolate chips. Roll cookies into 2 inch balls, place on sheet, and barely flatten the top with your hand. They will be pretty sticky. Bake 9-11 minutes and remove when edges are golden brown. (Tend to look a little undercooked but they will continue to cook once out of oven)
